6 medium baking potatoes, unpeeled
Cooking spray, as needed
1 large onion, thinly sliced,
and separated into rings
3 tbsp all-purpose flour
2 1/4 cup cold water
3/4 cup barbecue sauce
1 tbsp white vinegar
1/2 tsp salt
1/8 tsp freshly-ground black pepper

Preheat oven to 375 degrees. Thinly slice (1/8-inch thick) potatoes and
